I am in love. I didn't think this would happen to me. I was never the kind of girl to fall for something so popular, so easy! I will admit it; I enjoy doing most things the hard way. I never shy from hard work and taking on something huge! But I can't help it.. he draws me back! I just can't get enough of him…. His name is Instant Pot, and I see him almost daily. 

This might sound ludicrous, but I do hate kitchen gadgets and appliances. Can anyone feel me on this? I just enjoy peeling the garlic by hand, cutting apples by hand and just letting the cooking take me away. So when I have gifted for one birthday an instant pot, my thought was “great a huge stupid crockpot that I have to store” and almost on the daily I am proven wrong, and I fall deeply in love with my stout little pressure cooker! Also, you read that right; I hate crock pots. But this post really isn't all about my love affair with a glorified crockpot. It's about the easiest and most delicious soup!

I made this recipe up one day when I had a dear friend who had just gotten home from the hospital and was in need of a bowl of comfort. It had been a long day and I needed to make something fast! This soup is light but very satisfying. Healthy and hearty! Basically its the best soup ever. So I shan't make you wait any longer, here's the easiest soup you will ever make from scratch.

Thai Tomato Soup - Instantpot
Vegan, gluten free and amazing! This bold soup will be a hit at your table, it is easy and so tasty!
Ingredients
  • 1 Onion chopped
  • 1 Red pepper chopped
  • 2 cloves fresh garlic chopped
  • 4 Cups Fresh tomatoes ( I use whatever I have on hand)
  • 2 Tablespoons Red curry paste
  • 1/2 teaspoon Paprika
  • 1 Knoll vegetable bouillon
  • 3 Cups Vegetable stock
  • 1 Can coconut milk
  • Garnish Thai Basil or Cilantro
Instructions
Prep: Chop onions, garlic and tomatoes. Press your sauté setting on your instant-pot, add a splash of olive oil and then add onions and garlic sauté until fragrant (3 mins). Add tomatoes and cook until the tomatoes fall apart now add curry paste, paprika, bouillon cube and sauté until all components become fragrant (2 mins). Add vegetable stock and set your instant pot to Manual with 10 minutes. Now let the steam release. Add your coconut milk and blend your soup with a traditional blender or an emersion blender. chop Thai basil and sprinkle on your soup before serving!
